Collection: Pork

All of our pork products are made with locally raised Yamanashi pork.

Our loin and collar cuts use Shingen pork, while our shoulder and belly cuts use Fujizakura pork, chosen to suit the desired characteristics of each cut.

Both are high quality breeds with exacting quality standards. No prophylactic antibiotics, hormones, or any other nasties are used. We buy direct from farmers, and the meat is dry aged before being carefully boned and trimmed by hand.
