Our lamb is Fuji Wine Lamb, reared on a nearby farm at the base of Mt.Fuji.

Inspired by the Koshu Wine Beef which we use, the lambs are also fed Koshu wine lees and okara, byproduct of the winemaking and tofu-making processes.

This gives the meat a tender and delicate flavour, which balances perfectly with the rich lamby sweetness of the fat.

Surrounded by unspoilt nature, the farm is fully chemical-free, with no hormones or prophylactic antibiotics used. Both the farm and it's Koshu Wine Beef breed have won multiple awards.
