A luxurious blend of lamb shoulder and leg, made with 100% Fuji Wine Lamb. 

We only use carefully trimmed cuts, from which we have removed any connective tissue, glands, and any other bits you don't want to eat. Ground only once, we carefully blend two of the finer cuts to give the right balance of fat and lean, as well as texture. We're confident that what results is the best ground lamb available in Japan.

Available in 500g or 1kg packs, finely or coarsely ground.

For most uses we recommend the coarse grind for its superior texture, though the fine grind is better for forming into kebabs etc.
